Mexican Casserole

1½ Ibs. hamburger, browned and drained
Mix and heat:
  1 can milk cream of mushroom soup
  1 small onion
  1 can Rotel tomatoes

Cut corn tortillas in quarters. Dip in grease. Put in casserole. Layer. Put cheese on top. Bake 30 minutes at 350°.

 

 

 

Green Enchiladas

Heat in top of double boiler:
  1 can cream of chicken soup
  1 small can of evaporated milk
  8 oz. Velveeta

Add:

  1 small jar of pimentos, chopped
  1 small can of chiles, chopped

Combine:

  1½ lb. Longhorn cheese, grated
  1 cup chopped onion
  1 lb. lightly browned meat

This recipe is enough for one dozen tortillas. I use the corn tortillas. Heat each one separately in a small amount of grease. Fill each one with meat mixture. Roll tightly and place in 9 x 13 baking dish. Cover with the cheese sauce made of the first 3 ingredients plus the pimentos and chiles. Place aluminum foil over the baking dish and bake at 350° for 30 minutes.

 

 

Taco Meat

1 small potato, boiled
2 Ibs. ground meat
salt and pepper to taste
1 tablespoon dried minced onions
2 teaspoon garlic powder
1 teaspoon cumin
1 medium or 2 small cans tomatoes

Brown meat and onions. Sprinkle on garlic, cumin, salt, and pepper. When meat is thoroughly brown, mash tomatoes well and add to meat. Drain potato, add to meat, mash and mix well.l use to fill taco shells or make taco casserole.

 

 

Taco Casserole

Layer:
softened tortillas
taco meat
1 can chopped green chiles
Cheddar or Colby cheese, grated to cover layer
Picante or canned taco sauce according to taste

Bake at 350° till cheese is melted and casserole hot.

 

 

Rueben Casserole

1 qt. sauerkraut, drained real well
1
¼ cup sour cream
1 med. onion, finely chopped
¼ t. garlic powder
1 can corned beef or 4 (2
½ oz.) packages
12 oz. Swiss cheese grated
½ cup melted oleo
6 slices rye bread cut in cubes

Mix the first four ingredients together and put in the bottom of a greased casserole and refrigerate overnight. Spread corned beef over this and sprinkle with grated cheese. Top with bread crumbs mixed with the oleo. Bake at 350° for 30 minutes.

 

 

 

Supper Super

1½ cups dairy sour cream 1 cup water
1 pkg. (5\oz.) Pillsbury Hungry Jack 1 can (15 oz.) tomato sauce
mashed potato flakes with tomato bits
1 lb. ground beef 1 can (12 oz.) corn with sweet peppers,
1 Tbsp. instant minced onion undrained
1 tsp. salt ¼ to ½ tsp. pepper
1/8 teaspoon Oregano ½ cup diced cheese

In ungreased 2½ or 3 qt. shallow casserole, blend sour cream and ½ cup water. Stir in dry potato flakes. Pat onto bottom of casserole. In large skillet, brown beef. Stir in water and remaining ingredients except cheese. Spoon beef mixture over potatoes. Sprinkle with cheese. Bake at 350° for 25 to 30 minutes.

 

Dorito Delight

Place 1 regular pkg. Doritos over bottom of 9 x 13 pan.

Brown 1 lb. ground beef and chopped onion. Add 1 can mushroom soup, 1 can chopped green chili peppers, 1 can (7 oz.) evaporated milk, 1 small can mushrooms

(drained). Heat well. Pour over Doritos and top with grated cheese. Bake at 350° for 20 minutes and serve immediately.

A quick and hearty dish the kids will like.

 

 

 

 

Homemade Corn Dogs

Mix:
  2 cups pancake mix
  ¼ cup corn meal
  1 tablespoon sugar

Add water slowly to make thick batter. Dip wieners in batter. Deep fry in hot oil. (If batter is too thin or oil not hot enough, batter will not stay on Wiener.) Drain and let cool.

(My children called home from college for this recipe.)
