Gum Drop Cookies

1 cup shortening ¾ cup white sugar
¾ cup brown sugar 2 eggs
2 cups oatmeal 1 can coconut
1 cup pecans 2 cups flour
1 teaspoon soda ½ teaspoon salt
1 teaspoon baking powder 1 or more cups gum drops

Mix all ingredients. Shape into balls and bake on cookie sheet at 350° for 10 minutes or till done.

 

 

 

Hello Dolly Cookies

¾ stick butter or oleo 1 cup graham cracker crumbs
1 can (3¼ oz.) coconut 1 pkg chocolate chips
1 cup pecans 1 can Eagle Brand milk

Melt butter in 8 or 9 inch pan. Sprinkle crumbs over butter. Add in layers: coconut, chocolate chips, and pecans. Pour Eagle Brand over all and bake in 300° oven for approximately 40 minutes. Cut into squares while warm.

 

 

 

Honey Bars

1 cup sugar 2 cups flour unsifted
1 teaspoon soda 1 teaspoon cinnamon
3 eggs ¾ cup oil
¼ cup honey 1 cup nuts

Mix all together and press into an ungreased pan. Bake at 350° for 25 minutes or until it rises and falls. After removal from oven, spread with icing listed below.

 

Honey Bars Icing
1 cup powdered sugar 2 tablespoons mayonnaise
1 tablespoon water ½ teaspoon vanilla

Mix and spread over bars. When cool, cut into squares.

 

 

Bisquick Brownies

1 box (1 lb.) brown sugar 2 cups Bisquick
4 eggs 1 teaspoon vanilla
1 cup coconut 1 cup pecans

Mix sugar and Bisquick. Make a hole in the middle and put in eggs and vanilla. Beat well, stir in coconut and pecans. Bake in a greased and floured pan (9 x 13) for 30 minutes in 325° oven.

 

 

 

Butterscotch Rolled Cookies

1 box (1 lb.) brown sugar 1 teaspoon salt
½ lb. (1 cup) soft butter 2 eggs
1 teaspoon vanilla 3½ cups flour
½ teaspoon baking soda 1 teaspoon baking powder
½ teaspoon cinnamon  

Mix sugar, salt, and oleo thoroughly in a large bowl. Beat eggs and vanilla and add to mixture. Beat until light and fluffy. Sift together flour, baking soda, and cinnamon. Gradually blend dry ingredients into mixture. Chill well. Roll dough 1/8 inch on well floured board. Cut into fancy shapes. Place on ungreased cookie sheets Bake in 350° oven for 8 to 10 minutes or until brown around edge. Top with Decorating Glaze. Yield: 6 to 10 dozen cookies

Decorating Glaze:
1½ cups powdered sugar 1 slightly beaten egg white
1 tablespoon melted butter 1/8 teaspoon salt
½ teaspoon vanilla  

Blend powdered sugar into egg white. Add melted butter, salt, and vanilla. Beat until smooth. If glaze is to thin, add more sugar. Color as desired.

Options: Can be shaped into balls rather than rolled and cut.
Instead of glaze, press chocolate chips, M & M’s, or cinnamon candies on tops of cookies, or sprinkle with "Bits o’ Brickle." Bake as usual.

 

 

 

Cookies From Cake Mix

To cake mix (any flavor) add:

2 eggs
2 tablespoons salad oil
2 tablespoons water (up to ¼ cup)

Drop by teaspoonfuls onto cookie sheet and bake at 375° for 8 to 10 minutes. You may add chocolate or vanilla chips or nuts if desired.

 

 

 

Caramel Layer Bars

14 oz. light caramels ½ cup evaporated milk
1 box German chocolate cake mix ¾ cup melted oleo
1/3 cup evaporated milk 1 cup chopped pecans
6 oz. chocolate chips  

Mix cake mix, 1/3 cup evaporated milk, ¾ cup oleo together. Add nuts. Press half of mixture into 13 x 9 pan (greased and floured). Bake at 350° for 6 minutes. Cool. Mix melted caramels and ½ cup evaporated milk. Sprinkle chocolate chips over crust. Pour caramel mixture over it. Take dough in tiny pieces and sprinkle all over. Bake at 350° 15 minutes. (Good heated and topped with ice cream.)

 

 

 

Chocolate Crinkles

½ cup vegetable oil 2 cup flour
4 squares unsweetened chocolate, melted 2 teaspoons baking powder
2 cups granulated sugar ½ teaspoon salt
4 eggs 1 cup powdered sugar
2 teaspoons vanilla  

Mix oil, chocolate and granulated sugar. Blend in one egg at a time until well mixed. Add vanilla. Measure and stir flour, baking powder, and salt into oil mixture. Chill several hours or overnight. Heat oven to 350° . Drop teaspoonfuls of dough into powder sugar. Roll in sugar; shape into balls. Place about 2 inches apart on greased baking sheet. Bake 10 to 12 minutes. Do not overbake.
